1 ½ cups almond meal ¼ cup unsweetened good quality cocoa powder 1 teaspoon baking powder 2 eggs 1 teaspoon vanilla extract 1/4 cup macadamia nut oil ¼ cup milk 2 tablespoons honey Preheat oven to 350 Combine almond meal, cocoa powder and baking powder. Add the eggs, oil, milk and honey then mix well to form a smooth batter. Spoon into 12 small individual cupcake tins.
Gluten Free Zucchini Fritters - these were delicious! Light and summery with all the beautiful fresh herbs. Despite squeezing the liquid out of the zucchini like mad, my mix was still too wet so I had to add quite a lot more almond meal but the result was great. Served with spinach salad and chutney, yum.
