Easy peasy veggie dish Chop and combine 1 cup of chopped: capsicum, broccoli, spinach, onion, fennel and 1/2-1 cup of boiled chickpeas - substitute with something more SANE if 100% SANEity is your goal - crack an egg or two into mix and stir fry in 1 tbs coconut oil. Serve piping hot and enjoy!
Chicken, egg & veg muffins In a bowl combine 1 cup chopped capsicum, 1 cup broccoli, 1/2 cup onion flakes, chopped parsley and basil & salt/pepper + 1/2 teaspoon baking powder. Blend ingredients (or not - depending upon preference!) then combine with 8 eggs. When happy with consistency (if not, add more veg!) pour into lined muffin tin and include shredded chicken breast in each muffin case before baking at 180 degrees for 10-30 mins. Store in fridge or freezer.
Sweetener-free SANE raspberry jam In a saucepan, heat 500g fresh, frozen raspberries on low until they begin to thaw. Add 1/4 cup ground chia seed into the mix with 1 tspn lemon juice and stir well to combine. If you like your jam chunky, press firmly down on mix to squash raspberries to desired consistency. If you prefer smooth jam - pour mix into blender (or use hand mixer) to blend for a few seconds until smooth. Pour into airtight jar and keep in fridge for 3-4 days.
Easy, simple, homemade coconut milk. Combine 1 cup organic dried, shredded coconut flakes with 4 cups filtered water. Leave o/night before combining in blender on high for 2-5 minutes. Strain coconut milk into airtight jar/jug through a nut bag or cheesecloth to catch the coconut flakes. Makes about a litre. Store in fridge for up to 3-4 days. Use coconut flakes again to make another litre before discarding or recycling to make delish SANE coconut biscuits!

A quick sweet SANE treat... Combine 1 cup low fat Greek Yoghurt with 3-4 sliced strawberries and blueberries. Top with 1 tablespoon of your favourite SANE nut butter, cacao nibs or a little shredded coconut. YUM!

Combine: 1 cup pine nut milk 1/2 cup filtered water 1 cup cranberries (or chopped red capsicum if you're avoiding fruit) 1 medium cucumber 2 generous handfuls of spinach 1 stick of celery (leaves included) 1 scoop of protein powder (your choice) 1/4 large or 1/2 small avocado Blend on high, serve as is or chilled from fridge.
SANE bread Blend 5 eggs, 1/2 cup ghee. Add: 1cup water, 1cup grated carrot, 3/4 cup coconut flour, 1/4 cup ground chia, 2 tsp baking powder, 1/4 cup parsley, 1 tablespoon dried rosemary, 3/4 cup onion flakes, salt/pepper. Mixture should resemble chunky, thickened soup. If not, add more water. Pour into bread tin and bake at 180 degrees for 1-2 hours. After 1 hour - check & cover top with foil in oven if still not ready. Leave o/night before enjoying.
Got (SANE) Milk?? Soak 1 cup pumpkin seeds in 4 cups filtered water. Leave o/night. Drain & re-combine soaked seeds in 4 cups fresh filtered water & blend on high. SANE Almond and Strawberry Tea Cake... Preheat oven to 160 C. Combine 500 grams grated carrot, 3 eggs, 2 tsp vanilla extract, 2 tsp cinnamon, 1/2 tsp nutmeg, 400g almond meal, 60 ml coconut oil, 1/2 cup fresh strawberries and 2 tsp baking powder. Pour into baking tin/s of choice. Bake until cooked through. Cover if necessary with foil. Remove from oven and cool. Serve alone or with greek yoghurt Enjoy :)
Easy, yummy, SANE 'coconut ice' treat Blend 500 grams of shredded (organic, preservative-free) coconut on high in blender until mix forms a milky, runny, buttery consistency. Add 1 tablespoon of maca powder & blend. Pour mix into a lined slice tin. Place in freezer. Blend another 500g of coconut until runny, add 1/2 cup fresh/thawed raspberries combine before pouring on top of frozen coconut layer in slice tin and re-freeze until set. Take out, cut into slices & enjoy with green tea :)
