Frittatinis. Inspired by Sarah Wilson's recipe in my I Quit Sugar book, I tried these today. Great results that we'll be eating off of for over a week! A few notes... I pulsed up chopped onion (about a third of a med.), a shallot, half an orange pepper, a small zucchini, broccoli and cauliflower...definitely more than 2 cups! Added just over 4 pieces crumbled bacon and a touch of pink sea salt.
