Cappy & Pegody's World: Making Cajun Green Onion Sausage. Very simple bulk sausage but you need a grinder. I can buy this at the supermarket, but homemade is better. Drop balls of it into gumbo, make patties for sandwiches, brown it and make a dark onion gravy and serve it over fluffy white rice.
