Carrot cake porridge for me and the kids this morning, made in the Thermomix: blitzed up two carrots, added ground pecans, vanilla, cinnamon, ground ginger, oats, milk of choice & water (using the EDC porridge recipe as a basis for those who have a Thermie). Topped with kefir and candied pecans (a few pecans toasted with a little rice malt syrup). The porridge needed no sweetener, thanks to the sweetness of the carrots and cinnamon. Leftover Niçoise is a perfect candidate for #jarsalad! It keeps the ingredients from going soggy, as they would if mixed in a container. Dressing (olive oil, red wine vinegar and Dijon) at the bottom with olives, green beans and zucchini, cherry tomatoes, potato and salmon. Boiled eggs last to prevent them getting squashed! A few minutes before I was ready to eat I tipped it upside down to let the dressing run through. Then opened and tipped onto a plate. Then I ate it.

From the bottom - pickled ginger with tamari, sesame oil and fish sauce; rice noodles; cashews, sesame and sunflower seeds; salad - carrot, cucumber, radish, alfalfa, lettuce, coriander and shallots. When ready to eat, place upside down for a few minutes to let the dressing run through. Tip onto a plate. Eat.   #dreamingofalmonds
