Cara's Healthy RAW energy balls (pictured)  1 1/2 cups pitted medjool dates, soaked in water for 15 mins 1 1/2 cup raw almonds 1 tsp coconut oil 1 tbsp cacao (probably a teeny bit too much)  Sprinkle of chia seeds  Blend all the ingredients together in a food processor (add more almonds/almond meal as needed if the mixture is too wet and blend again until mixture is an even texture) Roll small sections of mixture into a ball, and roll in desiccated coconut.
