I roasted my own peppers, but jarred roasted red pepper work just as well. Pepper Rollatini Ingredients: -1½ cup part skim ricotta or 1% cottage cheese -½ cup grated Parmigiano Reggiano -½ tsp salt -¼ tsp pepper -3 tbsp fresh chopped parsley -1 egg -16 roasted red pepper HALVES (8 whole roasted red pepper), homemade or jarred Breadcrumb Topping Ingredients: -¾ cup panko breadcrumbs -¼ cup grated Parmigiano Reggiano -½ tsp paprika -½ tsp onion powder -½ tsp salt -¼ tsp pepper -3 tbsp dried parsley -3 tbsp olive oil -Preheat oven to 375F -Strain the ricotta or cottage cheese to remove any excess water. -To a medium-sized bowl add ricotta or cottage cheese, grated parm, salt, pepper, parsley and egg. Mix well. - Assemble the Ravioli: Place 2 slices of zucchini in a cross pattern. Top with a tablespoon of filling, fold over to close, and place aside. - Tomato Sauce: Heat olive oil, sauté garlic, basil stems, and chili. Add passata, sugar, salt, and water.
