Although there are many varieties of lamb’s ear, I have a strong preference for the Helen Von Stein variety. It’s hardy in zones 4-8. Why do I love it? 1. It looks like a large rosette. In fact, many people believe it looks like a hosta and are confused how I grow a hosta in full sun. 2. It brings a soft gray/blue hue to the garden, helping over plants shine. 3. It fills in quickly. I have it in places where I want it to become a ground cover so I don’t have to deal with weeds or mulch. 4. It’s tough. I put it in places where I know I’ll pull hoses over it and people may step on it. There’s a very important thing you MUST know about any lamb’s ear. It WILL increase in size. Here’s how I maintain it: 1. In fall, I cut it back to a smaller size than I want in the spring, knowing it will increase in size the following summer. 2. In spring, I evaluate it to make sure it won’t spread over an existing plant. It’s easy to divide as well. 3. During the growing season, the bottom leaves will turn yellow or brown, but you rarely see them. If they start showing I just pull them out, but that’s really not necessary because it’s not too noticeable.
