OREO CAKE POPS. Ingredients- 300 grams Oero Cookies, 150 grams Cream Cheese, 450 grams White Chocolate, 60 grams Merken's Candy Melts. METHOD-Crush oreo cookies finely in a food processor.  Add cream cheese and process until the mixture clumps together.  Put in fridge overnight. Roll into balls, place on baking paper, put in fridge until firm. Melt the Chocolate. Dip the truffles into the melted chocolate, allow the excess to drip off and than place on the baking paper.

CARROT CUPCAKES.  1½ cups plain flour 1 cup sugar 1 teaspoon baking powder 1 teaspoon cinnamon 1 teaspoon bicarbonate of soda ½ teaspoon salt ⅔ cup vegetable oil 2 eggs 1 cup grated carrot 1 teaspoon vanilla essence ½ cup crushed pineapple, including juice 1/2 Cup Walnuts, crushed  METHOD- Mix all the ingredients for the cake in one bowl stirring slowly and then beat on medium speed for 2 minutes.  Bake at 180°C.  Make Cream Cheese Icing.

These pineapple carrot cake muffins were easy to make and moist without being too dense. Plenty tasty without frosting, though a cream cheese frosting would probably be a delicious addition.
