Chicken Parm Meatballs. Delicious. Amazing how much these tasted like a plate of chicken parmigiana. Super easy to put together, I left out fennel seeds and made my meatballs a little bit smaller (closer to golf ball size). Instructions say to bake for 15 minutes - mine took 25. Definitely a repeat dinner. ****1/2
Taco Pie: Place puff pastry on the bottom of a greased pie tin. Cook beef and onions until beef is browned. Drain. Add Salsa and taco seasoning. Cook until bubbly. Pour into crust. Bake for 25 minutes, or until crust is golden brown. Let cool for 5 minutes.Top with cheese, lettuce, and tomatoes. Cut and serve with sour cream.
PIZZA BALLS: 3 cans Pillsbury Buttermilk Biscuits; 60 pepperoni slices; Block of cheese; 1 beaten egg; Parmesan Cheese; Italian Seasoning; Garlic Powder; 1 jar pizza sauce:Slice cheese into ~28 squares. Flatten each biscuit & stack pepperoni & cheese on top. Gather edges of biscuit & secure on top of the roll. Line rolls in greased 9x13 pan. Brush with beaten egg. Sprinkle w/ parmesan cheese, Italian seasoning & garlic powder. Bake at 425 F. for 18-20 mins. Serve w/ pizza sauce for dipping.
Cheesy Potato Wedges... 4-6 Potatoes 1/4 c. Olive Oil Sea Salt, Pepper, your favorite Seasoning Salt 1 c. Sour Cream 1/2 c. Ranch Dressing 1/4 c. Milk 1 c. shredded Cheddar 1/2 c. shredded Mozzarella 1/2 c. Real Bacon Bits 1/4 c. Green Onions Cut potatoes into "steak fries". Place on foiled baking sheet. Drizzle with oil. Lightly toss with tongs. Sprinkle seasonings over the potatoes. Bake 400* for 40 min til fork tender.
