Stephanie Alexander’s Lemon Curd. This is delicious as a spread for toast or scones, to sandwich together a sponge cake or as the filling for small tartlets. A pot of home-made lemon curd is also a lovely gift. It keeps for weeks if well sealed and refrigerated after opening. #Recipe

Potato & Leek Soup. Ingredients: 550g Innovator variety. potatoes, diced into 3cm pieces 4 Leeks chopped (Use the bottom half – just below where the leaves branch out from the stem). 3 Cloves of Garlic, peeled and crushed. 2 Tbsp Unsalted Butter. 1.75L Vegetable or Chicken Stock.  2 Bay Leaves. 1 tsp Salt. ½ tsp Fresh Cracked Mountain. Pepper (plus more to garnish if you wish). 1 cup Thickened or ¾ cup Double cream. #Recipe

Ingredients:  150g (1 cup) plain flour.  1 ½ tablespoons cocoa powder. 165g (¾ cup) sugar. 1 ½ tsp baking powder. ½  tsp salt. ¾  tsp gelatin. 60ml (¼ cup) oil. 4 egg yolks. ½ cup (125ml) concentrated cherry juice (made from 1 cup of BiteRiot cherry juice boiled down). 3 tsp red food colouring. 4 egg whites. ¼ tsp cream of tartar. #Recipe

Ingredients:   300 ml mushroom stock.   1/2 cup chicken stock.   1 1 /2 Tbsp extra virgin olive oil.   1 onion, finely diced.   120g Arborio rice.   60ml dry white wine.   30g black truffle, shaved.   30g Grana Padano Parmesan cheese.  40g cultured butter. . Salt and freshly ground pepper.  1 cup watercress. #Recipe

Ingredients:  400g Spaghetti. 1/2 cup olive oil. 20g butter. 150g black olives. 2 salted anchovies, washed and chopped. 2 cloves garlic, crushed. 1tsp salted caper buds rinsed & drained. Italian parsley roughly chopped. 250g of canned peeled tomatoes. Salt & pepper to taste. #Recipe
