Mint choc-chip cheesecake

We can’t get enough of this match made in heaven – choc and mint – so we turned it into a cheesecake. It is a perfect edible centrepiece for the Christmas table (or perhaps not, as it may disappear in seconds!). This is one of my go-to ‘do-ahead desserts’ as it needs 6 hours to set anyway, so make it the day before serving.
