Easy and healthy meal that is so delicious! 1/3 cup extra-virgin olive oil 3 tb red wine vinegar 1 tsp dijon mustard, plus more as needed 1 tb dried oregano 1 tsp garlic powder 1 tsp sea salt, 3/4 tsp ground black pepper 4 cups finely chopped iceberg lettuce (about 1 head) 3 cups finely chopped romaine lettuce (approx. 1 head) 4 persian cucumbers, chopped 1/2 cup salami 1 can garbanzo beans 1/2 cup chopped kalamata olives 3/4 cup diced tomatoes 1/2 cup grated parmesan cheese, plus more for topping @kalejunkie
