Lemon Cake Balls (no bake). Condensed milk, crushed biscuits, coconut and lemon – a match made in heaven. These balls are easy to make whether you have a Thermomix, food processor or do it by hand. They are great to keep in the freezer for when unexpected guests pop around or you just need something sweet to get you through the afternoon. I can’t get enough of these things!

Roll out small balls of pizza dough of choice. Suggested ingredients bacon, garlic, spinach, cheese and tomato paste blitzed together. Use any filling you like. Pop a little filling on the flattened out ball of dough, roll up into a ball by dragging edges towards the centre, flip over, brush with milk. Place together close on a tray and bake at 180o for about 20-30 minutes. Can be frozen. They are fine served cold or warmed quickly in the microwave.
