Spinach, Feta & Sun-dried Tomato Muffins These are delicious - they make great lunchbox additions for the kids as well as the adults in our house - LOVE them!

Vegetable and Bacon slice: 6 eggs 1 large zucchini grated 1 carrot grated  1/2 onion finely diced 1/2 cup grate cheese 300g thinly sliced bacon Pinch of nutmeg and baking powder Salt and pepper to taste Beat the eggs in a large bowl the add nutmeg, salt, pepper and baking powder. Then softly stir all ingredients together. Place in lined tin and back for 25mins at 180 degrees. Then slice for lunch boxes.

Quirky Cooking: Layered Maqui Chia Pudding -  I use this recipe and change it around every time to use what I have on hand. Another eg. has lucuma powder, maca powder, vanilla & cinnamon in it; and fresh pineapple, macadamias, passionfruit, goji berries, coconut cream, and a little pure maple syrup on top. Yum
