These Apricot Coconut Crumble Bars are a twist on a lemon version of the same cookie bars recipe but could easily be made with any jam filling you prefer.

Apricot Coconut Crumble Bars

Apricot Coconut Meringue Bars have a soft cookie base, covered with sweet apricot jam & a layer of coconut meringue. Substitute any flavor jam if you like.

APRICOT SLICE 1 cup diced dried apricots 1 cup oats 1 cup coconut 1 cup self-raising flour 125g melted butter 1 tbs honey 1 beaten egg Method Combine all the ingredients together and spread the mixture on to a greased slice tray. Bake for about 25 minutes in a moderate oven - 180C. Optional: top with icing and sliced almonds.
