I took the THM pancake batter recipe pg. 223, doubled it, and added a tsp almond flavor, cooked up about 6 peeled sliced apples in 2 tsp coconut oil, 6 tsp Truvia, 2 tsp pumpkin pie spice (added about 1/2 to 3/4 cup of water as they cooked), poured the apple mixture in the bottom of a lightly sprayed 9x13 baking dish, poured the pancake batter over the apples. Baked for 30 minutes at 350 degrees. Flipped it over onto a cutting board. Cut it in 12 pieces. Sprinkled a tiny bit of sugar free syrup!
