Caprice Gateau- layers of hazelnut dacquoise, caramel & chocolate mousse, crunchy feuilletine layers & poached pear. Decorated with sliced pear, caramelized hazelnuts & hairline. Made during Le Patissier Class at William Angliss.
Opera Gateau- 7 layers consist of Joconde sponge, chocolate glaze ganache, coffee butter cream and coffee syrup. Decorated with golden leaf. Made during my Le Patissier Class at William Angliss.
Chocolate & Orange Flourless Cake. Coated with dark chocolate ganache, topped with gold powder & dehydrated orange.

Jon & Blessy's cake- A six inch round mudcake with four layers of cadbury dark chocolate ganache, sealed with white chocolate ganache. Frills made of swiss meringue butter cream, with peach motif- band & flower made of molded chocolates. Inspired by Jessica Harris Craftsy class. Heart topper made of tempered chocolate and letters made of black candy melts. All this by Sweet n Simple Cravings.
