Baked Ravioli- quick, easy dinner: two layers of sauce, frozen ravioli, shredded mozzarella and topped with grated parmesean cheese. Bake at 400 for 40 covered with foil and another 10 minutes without foil.
4 bell pepper halves 1T olive oil kosher salt black pepper 1/2 c. pizza sauce 2 c. shredded mozzarella 1/2 c. finely grated Parmesan 1/3 c. mini pepperoni 1 tbsp. chopped parsley - Preheat oven to 350°. On a sheet tray, drizzle peppers with olive oil and season witih salt and pepper. Spoon sauce onto each pepper half. Sprinkle with cheeses and top with pepperoni. Bake for 10-15 minutes, until the peppers are crisp-tender and cheese is melted. Garnish with parsley
Butternut Squash Pizza: Broil 2 round slices of butternut squash 1/2" thick peeled or unpeeled for 10 min. Turn over. Top with 1/4 cup tomato or pizza sauce or tomato paste with herb,, 1 oz fancy shredded cheese ( mexican cheese blend or mozzarella), & sprinkle of parsley. Broil 2-3 min til cheese melts. gm
