Chewy Amaretti Cookies. I made them with a little less sugar than 1 cup and when i made them I thought it was incredibly sweet. I sandwiched them with jam and served them the next day for a party - they were amazing! I definitely think they tasted better the next day, which is pretty unusual for a cookie. I just used a ziploc bag as a piping bag. They are easy to put together, and look and taste impressive!

Bake for 15 minutes, or until the cookies have risen, are a deep golden color and have tiny cracks. Remove from the oven and place baking pan on a rack to cool. When cool gently peel cookies from parchment. If they stick to parchment, turn the paper over, take a damp paper towel and gently wipe the bottom of the parchment paper to loosen the cookie.
