Arctic Char with Green Olive and Lemon Dressing: Didn't have char, so I substituted salmon and it came out great.  Even my 10-year-old son loved it.  I could see multiplying this recipe for a dinner party and serving with wild rice pilaf or orzo, then green beans with bacon or spinach salad, and a pomegranate studded panna cotta desert.  Yum!
