Stewed Spicy Chicken With Lemongrass And Lime

This wildly flavorful chicken dish is inspired by the bright flavors found in Thai cooking – garlic, galangal (or ginger), chiles, turmeric, cilantro and lemongrass. While its flavor profile is complex, it is blessedly easy to make. Just sauté the savories, herbs and spices and add the chicken to the pan. Allow it to cook, covered, for about 20 to 30 minutes. Korean fried zucchinis are extremely healthy & tasty! It's a common side dish for any Korean meal. Slice Zucchini pieces, 1/2 cup of flour, 2 eggs beaten, 2 tsp salt, 1-2 Tbsp of vegetable oil, Distribute a pinch of salt over the zucchini slices & remaining salt to the beaten eggs. Heat a lightly greased pan to medium heat. Coat the zucchini slices with flour, dip in beaten eggs. Place them in the pan. Saute the zucchinis about 3-4 mins per side, until they're a golden brown color.

Served it with steamed spinach and germinated brown rice. Delicious
