Avo Mayo -- 1 ripe avocado, Juice of 1/4 lemon or more, 1/4 tsp garlic powder, 1/4 tsp black peper, 1/4 tsp sea salt, 3 Tbls light olive oil. Combine all ingred except oil in food processor, blend til pureed, scraping sides. When smooth, SLOWLY drizzle oil into processor while blending. Use immediately, or store glass jar in fridge 3-5 days or longer
Chickpea Avocado Mas 15 oz. can chickpeas 1 ripe avocado Juice from 1/2 lemon Salt/pepper to taste Optional toppings/add-ins: sprouts, tomato, spinach, green onion, etc. Directions Rinse and drain chickpeas and place in a bowl. Mash with a potato masher or fork. Cut avocado in half and remove pit. Scoop out the avocado and place in bowl. Mash again to combine with the chickpeas. Add lemon juice and stir. Salt/pepper to taste if desired.
