Baked Eggplant Sandwiches: Ingredients: Eggplant; sliced cheese; sun dried tomatoes; fresh parsley; almond meal; Parmesan cheese; egg. Slice eggplant 1/4 inch thick circles . Set oven to 375 F. Grease baking sheet. On half of the eggplant slices, place a slice of cheese, some sun dried tomato, and parsley. Top with 2nd eggplant slices. Firmly hold the eggplant sandwich and coat in the egg, then coat in the almond meal -parmesan mix. Place on baking sheet, bake 40 minutes until golden.
