Grilled Lemon Garlic Zucchini - this was very tasty! A couple changes… I think it needed more of that italian seasoning, 1tsp just didn't seem like enough. I would also make sure the zucchini is room temp (ours was in the fridge) cause the butter hardened on them instead of nicely coating them. Otherwise the flavour was nice and subtle. Loved the lemon juice (used about 3/4 of the juice from a lemon instead of the whole thing which was perfect) Will make again with a few adjustments! :)
How to make healthy veggie crisps: 1. Peel the skin off a sweet potato 2. Spiralize using the green part of a Kitchen-nv spiralizer (only £8.75 from kitchen-nv.com) 3. Break up the spiralized pieces and lay them on a baking tray. 4. Season with BBQ seasoning, paprika, or whatever flavours you like. 5. Back on the top shelf of your oven for 15-20 minutes at 140C/275F/Gas Mark 1 until crisp.
BBQ Chip Chicken... one of my absolute favorite meals. 4 raw chicken breasts, 1-2 cups crushed BBQ chips, cover with 1/2 melted butter, cover and bake at 375 for 1 hr. Top with cheddar cheese and bake 10 minutes more. DELICIOUS!
