The BEST Carrot Cake Recipe.The reviews on this cake were awesome and I am so glad I tried it.Hands down the best carrot cake I have made!!! The buttermilk glaze adds another dimension to this delicious recipe. I double up on the cream cheese for the frosting. I also used 1-1/2 c of sugar in the batter instead of 2c. For the buttermilk glaze i reduced the baking soda to 1 teaspoon. Cake is perfect, moist and dense with the right amount of sweetness.
Truly the yummiest carrot cake we've ever devoured. Subbed Balance butter, butter flavored Spectrum and Daiya Cream Cheese for the frosting and omitted the sour cream. Skipped the nuts. Turned out so good no one knew it was "safe".
