Blackcurrant Cordial: (Non-alcoholic)  3.5# black currants;27oz sugar;juice & zest of 3 lemons;26oz water.  Dissolve suagr in water in large pot.  When sugar is dissolved, add zest and juice.  Bring to boil.  Now add currants.  Bring back to boil & mash currants a bit with potato masher.  When starting to boil, turn to simmer for 5 min. only!  Strain.  Pour to the very top of sterile jars.  Seal.To use-pour over crushed ice or dilute with sparkling water.
