I simplified the crap out of this recipe.. wanted something easy and quick.. cook ground chicken, add 1 cup of corn, 2 tbs of cream cheese and 2 tbs of hot sauce, mix together, stuff into cleaned out red peppers, top with cheese of your choice, cook at 350 for 15-20 min!! Yum :)
