How to Make Lacto-fermented Lemon Lime Soda

Ginger Wine/Beer- 1 gallon - 1 1/4c w sugar & br sugar, 1/2c grated ginger, 1/2c lemon juice, 1 pkg champagne yeast & water(enough to fill to neck of jug)  In a few cups of water simmer sugar & ginger 20 minutes.  Cool/Strain to jug.  Add lemon juice & yeast.  Top with water & AIRLOCK.  Leave for 3 weeks, rack, leave one more week, rack into bottles.  Ready to drink or age.
