Elderflower Champagne-(how to identify good flowers)- 1 bag flowers, sugar, 2 tbsp. White Wine Vinegar, 2 rind of lemons, 2 lemons juiced, 1 tbsp. tannin,or 1 teabag well steeped tea, nutrient or 2 Vit B1 tabs, champagne yeast, 4 pints boiling water, & 4 pints COLD WATER. Remove as much stalk as possible. (You need 1 pint petals compressed.) COVER, leave 4 days-stir 1x daily. (hydrometer read-1.010-if not leave longer- CHECK DAILY. & STRAIN-Put in demijohn. Age in good pop top bottles.
