Buttermilk Cheese and Chive Scones (perfect with warm comforting soup). I'm convinced cheese scones were invented to use up the last remnants of some wonderful cheese – in this case, Cheshire. When you're down to the last bit, that is the time to make these meltingly light, squidgy cheese scones. Serve them for tea on Sunday, warm from the oven and spread with butter.
Chicken Cheese Quesadilla Pie - (10") LC tortilla, 3C Chicken, 1/2 C fresh cilantro (chop), 1/3 C pickled jalapeño (drain), 2 C ched. cheese (shred), Salt & pepper, 2 lg eggs, 1 C milk, 1 C flour, 1 tsp. baking powder -- Preheat 450F. Grease 9" pie plate. Press tortilla into it & spray w/Pam. Mix chx, cilantro, jalapeños (opt.), 1 C chz, ½tsp salt, & ½tsp pep. & put on tortilla. Mix eggs, milk, flour, b. pwdr, & ½ tsp. salt 'til smooth & pour over filling, top w/ 1 C chz. Bake 16-20 min.
