Chiles Rellenos - When I waitressed at a Mexican restaurant, they would make these from scratch and they were AMAZING. This is the closest recipe I have seen, but they kept the peppers in the fridge overnight.
Ingredients for 6 servings 1 1/2 pound of thin cut top round beef steaks (6 steaks) 2 eggs 2 cups of bread crumbs or saltine crackers grinded into crumbs (see note) 2 garlic cloves chopped 1/2 teaspoon black peppercorns Vegetable oil for frying Salt to taste I did 2 servings with 2 steaks, 1 egg and almost 1 bag of saltines and powdered instead of fresh garlic. Liked the taste and texture.
This "Texas Style Lasagna" was so super tasty! Cody bought me a Freezer Meals cookbook from Taste of Home so I can get ahead of dinner (working 40+ hours a week makes cooking/planning so much tougher)! This meal was DELISH! It was fairly simple, but the tastes and textures were just right. This is the closest I've come to wanting to eat "mexican" at home instead of at our local mexican restaurants :) This will definitely be made again!
