Lemon Baked Cod: We ate this with some white rice on the side. Also added some lemon zest to the breading. The flavor was really good and wasn't too fishy. We'd make this again, though like all breaded meals it does make a mess.
Baked cod loin; 1T mayo; 1T Parmesean; Panko; S & P Preheat to 425. Rinse fish & pat dry. Line cookie sheet with foil, spray with oil. Place fish on foil. Mix mayo & parm add pepper. Spread on fish. Press crumbs into mayo mix. S & P. Bake 7 minutes, rotate pan, bake another 7-8 minutes. Sprinkle lemon juice on plate. Plate fish on lemon juice. very good. panko never gets brown tho, sprayed oil on top
Seared Cod with Chive Butter Sauce - This is simple and delicious. Even though I'm from Boston, I had never cooked cod before. Love the dense, meaty texture of the fish. I paired it with sweet potato fries and peas with a drizzle of sesame oil. Colorful and flavorful.
