Sweetened whipped cream is the perfect accompaniment to this slightly spicy dessert. The topping is made by simply baking cranberries placed in a layer over sugar and spices at the bottom of the pan. As the cake bakes, the sugar caramelizes, forming a rich syrup.
Cranberry Upside-down cake - i added apples and rhubarb and took it to family christmas party, and it was soooooo good. the cake was really tender, and the vanilla in it really came through. I usually avoid recipes that say "fold in egg whites" but this was worth it. and the cast iron worked great. had to add extra cooking time b/c I made the recipe at a 1.5 ratio. will make again.
