There are two main areas of growth of Indian tea: Darjeeling and Assam. Important cultivation areas are, apart from Darjeeling and Assam:    Dooars - west of Assam, mainly production of CTC teas.    Nilgiri - South Indian tea district, fresh teas, similar to those of Sri Lanka    Sikkim - north east of Darjeeling, high-quality teas    Terrai - south of Darjeeling, similar to Darjeeling, somewhat more herb in taste.

8 cups of milk  2 vanilla beans or 1 ½ teaspoon vanilla extract,  2 tablespoons agave nectar 8 cinnamon sticks 6 star anise ½ tablespoon ginger root slices, cut and sifted 2 teaspoons orange peel, ½ teaspoon cloves, whole ½ teaspoon ground nutmeg ¼ teaspoon black peppercorns 1/2 teaspoon ground cardamom ½ cup Darjeeling Black Tea (loose leaf)
