The flavour of wild garlic can be aggressive, but mixed with a little butter and melted on to the rich venison meat, it is mellow and subtle. The meat of roebuck venison is darker in colour and closer-grained than the other deer breeds; the cuts are often smaller. For this recipe, I have roasted a boneless haunch, but you can use saddle or a bone-in haunch (taking into account that cooking on the bone takes a little longer).
