Cucumber & Elderflower Spritzer: 1 chopped cucumber, ½ bottle white wine, 200 ml elderflower cordial, few mint sprigs-leaves picked, 2 ltrs chilled bottles soda water. Blend cucumber, wine, and elderflower. Pour through a sieve set into a jug. Pour the sieve back in blender, blend again until pulpy, sieve into jug. Add 2 tbsp of the pulp from the sieve into the liquid and discard rest. Fill glass with ice cubes and some mint leaves. Pour cucumber base half up glass, then top with soda water.
