English Roast Beef Pre-heat the oven to 220C. Make sure the meat is at room temperature, not straight from the fridge. Place onions & garlic in the roasting tin & rest the meat on top of it. Pour olive oil over beef, Turn oven to 200C-cook for 20 mins. Then oven to 180C-cook for 20 mins per 500kg.= med. At end remove meat from roasting tin, cover rest 30 mins. Lift garlic and onionscover foil. Keep juices, any burnt bits in the tin for the gravy later.
