VEGETABLE SOUP (1½ HOURS~Great for the crock pot!) ½ onion chopped 4 stalks celery chopped Quart of Broth (I use Vegetable broth) ½ head of Savoy Cabbage (or regular cabbage works too if you can’t find Savoy) 2 small 14oz cans of diced tomatoes, pureed. Frozen veggies: Peas, carrots, corn….your choice! I use all 3! 12 oz bag of Frozen Edamame (shelled soybeans) In a large soup pot, saute onion and celery in a few Tbsp of Olive oil til soft.
