Seared Scallops with Apple Cider-Balsamic Glaze _ I figured that an apple cider glaze would really bring out the natural sweetness of the scallops. Add spinach & cremini, oyster, & shitake mushrooms to that, for some earthiness, a bit of bacon, & I think you have a meal!
Lemon Ginger Dipping Sauce: 1/2 tbs minced ginger 1 shallot, minced 2 tsp sesame oil 1/3 cup chicken stock 1/3 cup white wine 2 tsp lemon juice 1 tsp soy sauce Heat oil in small saucepan. Add shallot, ginger and sauté briefly. Add chicken stock and white wine. Bring to a boil and boil until reduced by half. Add lemon juice and soy sauce, heat briefly. Remove from heat and allow to cool.
