Roasted Butternut Squash Salad with Warm Cider Vinaigrette was for dinner last night! It is a wonderful take on a Waldorf salad with a fall flair. And it didn't take too long to make either. The trick is buying pre-cubed butternut squash. The only thing I would change is having a little less salt. (I have a feeling my teaspoon is a little big...) Definitely will make this again!
