I love making this for company. It's absolutely delectable: tender, beautifully spiced lamb curry and rice. And there's a lovely, cooling cucumber mint raita sauce recipe included, to serve along side. You can assemble the casserole ahead of time.
Coconut lamb curry from taste.com Made this tonight - was delicious- I used a cheap cut of lamb- lamb for quarter chops, they fell off the bone. Added in more than four tablespoons of curry powder and also added a TBS brown sugar, sweet sherry and thickened at the end with cornflour. Also put beans, peas and x2 potatos with 2TBS mango chutney, 1 TBS would have been enough though. Need more chilli next time!!
