JO's Mixed roasted vegetables | My lazier version: Preheat oven & roasting tray to 220C. Chopped up 2 aubergines, 3 peppers & about 3-4 medium sized carrots, tossed with 2 tablespoons olive oil, 1 tsp oregano, 1 tsp basil & a knob of garlic butter. By this time oven will be piping hot - throw vegetables in tray for about 40 minutes. Sorted.

This is a fantastic dish - really easy - really tasty - really filling. Great one pot dish that isn't a stew. I decrease the potatoes and add other veg. To make it Gluten free, just use GF breadcrumbs. To make even more filling for teenage stomachs - serve with Polenta or Brown rice.
