Momofuku's Recipe: Nasu Dengaku/Miso Glazed Eggplant Recipe. I love the version of this dish that Ginza in Boston's Chinatown makes as well although I believe theirs is not vegan like this one is. I haven't made this dish so I can't be sure how it compares to Ginza's version.

spice rubbed slow roasted pork shoulder (for when you forget to marinate overnight for the momofuku recipe. double the brown sugar and maybe add some cane sugar, too.)
