Rocco Dispirito's Blueberry Cream Muffins from his "Now Eat This! Diet" book, which is wonderful. I used raspberries obviously and I used half white flour half wheat because my wheat flour makes things too bread-like. I also used fat free cream cheese instead of reduced fat. I can't tell the difference so I might as well go fat free. They are about 145 calories and it makes 12. So delicious.
This is a recipe I found by Rocco Dispirito from his Now Eat This cookbook. It is a favorite of ours. The parmigano reggiano can be expensive cheese and you can actually use less than is called for and it is just as good and still very cheesy. You could also choose to use Parmesan Cheese if you have that on hand. This is great with spaghetti squash. Enjoy.
