I pretty much followed this method exactly - added a little allspice and nutmeg and lemon zest, didn't use apples, used twice the weight of dried fruit - sultanas, raisins and currants soaked in a little hot water to plump up. I mixed mine in mixer rather than by hand and it worked fine.
