Pearl Couscous Salad ~ An economical take-off of a pricey deli salad - couscous (orzo), lentils, tomatoes, cucumber, red onion, green onion, red bell pepper, parsley, dried cranberries & golden raisins. Dressing: olive oil, fresh lemon juice, honey, salt & pepper. Refrigerate overnight. **UPDATE: Made this & it was very good. Next time will add broccoli florets for some crunch.
