Pomegranates only ripen in warmer climates. They are in season starting in October and are usually available fresh through December. They are a good source of Vitamin C and Vitamin K and Dietary Fiber.
Pomegranate: how to store. Spread arils (seeds) in a single layer on a parchment or wax-paper-lined baking sheet. Freeze for 2 hours, then transfer them to freezer bags. They’ll keep well for 9-12 months.
