After a lot of careful research and considering what my realistic options and abilities are in terms of building and financing, I have decided that converting a shed into a tiny house is my best option. This is the model I'll be purchasing (about $7,000 for a 12x20 and they have rent to own) and I can get a loan from the bank to finish out the interior. Plus side is it's still portable, though not as easily as a tiny house built on wheels. But it also has a lot more space so...priorities.

Great food storage! If you are renting you don't have to build it directly on the wall you can build the back with plywood and attach to the wall.
