Ritz Chicken : Season 4boneless breasts w/ s+p. Whisk 1/4c milk, 1egg yolk. Dip meat in milk/egg, then press into 2c shredded cheddar, then 1sleeve crushed Ritz. Bake @ 400deg 25-35min (to 165deg). In pot on Med., melt 2Tbsp butter. Whisk in 2Tbsp sour cream, 10oz can cream of chicken soup, 1/4c milk. Stirring, bring to boil. Reduce heat to Lo, simmer 5-10min til thickened. Season with s+p to taste. Serve over baked chicken.

FAMOUS BUTTER CHICKEN—I (LBB) used 3 large boneless, skinless chicken breasts, 2 beaten eggs, 1 sleeve Ritz crackers-crushed, ½ tsp garlic salt, pepper to taste. Dip the chicken in eggs, then dredge in the cracker crumbs and place in a 9x13 baking dish that has been lightly sprayed with non-stick cooking spray. Last, top chicken evenly with pieces of butter (little less than 1/2 cup). Bake on middle rack of oven @ 375 for 40-45 mins
