Healthy Rice Pudding - 1c short grain brown rice, 3c almond milk / milk of choice + 1 cup (divided) 1 tsp vanilla, ½ tsp cinnamon, 2-3 tbsp organic cane sugar / coconut palm sugar. Combine all ingredients, but 1 cup of milk in a rice cooker & set timer to "brown rice." Let cook until timer turns off & all water is evaporated. Mix in 1 more cup of milk. Serve hot.
The best rice, in my opinion: Short-grain brown rice. It’s chewy and delicious. Rinse first and sauté grains in 1-2 tbl of oil )so the grains don’t get super sticky and gloppy…ick), then add water or broth (if using for only savory purposes, e.g. stir fry instead of rice pudding) and cook as directed. I do 18 min in the pressure cooker with 2 cups of rice and 3 cups of water.
